What You Knead to Know About Your Sourdough Starter
Storage: Your starter should remain in a sealed glass jar in your fridge between uses.
Keeping It Alive:
Starter is a living organism. If not maintained, it will spoil. But, this starter is over a decade old and much more forgiving than most.
If after a long period of not feeding your starter you notice "hooch" or gray liquid at the top of your jar, scoop this out to ensure all gray liquid is gone. Then, remove one more scoop of starter just to be safe! This is a very normal part of caring for starter.
Now, fill your starter jar with equal parts flour & water (equal parts by weight, not volume).
So for 3oz water use 3oz flour → Stir until combined. Place lid loosely back on jar and leave jar out on your counter in a warm spot (72-80 degrees). Within 4-6 hours, your starter will become bubbly & smell tangy!
It’s now ready to use!
Tips:
If it’s very cold in your house, you can place your starter in a warmer place like the microwave with the door cracked open and the microwave light on. Or you can also place it in your oven with the light on. Neither the oven nor the microwave should be ON—just the light in them to create warmth.
If you won't use your starter for an extended time, you can freeze it in a ziploc freezer bag and then thaw it out and feed again when ready.
