Our Story

In 2022, our family experienced a health scare that sent me on a mission to take control of our health. Years into this journey, and we’ve learned more than we thought possible. The miracle of our bodies is the way they’re designed to thrive when we give them the nutrients truly needed for life. Enter in: freshly milled whole grains.

For nearly 150 years, our country has accepted store-bought white flour as the standard—and our bodies have paid a price for it. Devoid of nutrients, vitamins and fiber, it’s no wonder we haven’t been thriving! But even with intentionally purchasing organic, ancient grains from stores, we’ve learned those too are simply lacking the most healthful impact.

A quick history lesson

Pre-1870s, most flour was stone-ground at local mills. Families bought it fresh, often milled weekly, with the germ and bran intact. It had a short shelf life but was nutrient-dense.

With the industrialization of roller mills, it became too easy to separate the bran and germ from the endosperm, producing a fine white flour that stored much longer but lost oils, vitamins, and minerals in the process. By the 1930s, malnutrition was widespread because refined flour lacked essential nutrients. The U.S. government responded with the enrichment mandate (adding back iron, thiamine, riboflavin, and niacin). But enrichment never replaced the full nutrition of fresh-milled flour.

Today, over 100 years of mass-produced refined flour has trained people to think stripped-down, shelf-stable flour is normal. But we’re changing that!

Hester produces fresh, organic produce from local farmers in New York. Even our spices are fresh. Just because pickling is a preservation process doesn’t mean you can use dried-up thyme or week-old asparagus that’s already a little spongy.

We want to give our customers crisp, crunchy and delicious pickled vegetables and fruits. Most of all, we want to expand people’s palates and prove that pickles don’t always come in a green or red variety.
