In 2022, our family experienced a health wake-up call that sent us on an eager journey to learn more about nutrition. Years into this way of life, we’ve learned more than we thought possible. The miracle of our bodies is the way they’re designed to thrive when we give them the nutrients truly needed for life. Enter in: freshly milled whole grains.
For nearly 150 years, our country has accepted store-bought white flour as the standard—and our bodies have paid a price for it. Devoid of nutrients, vitamins and fiber, it’s no wonder we haven’t been thriving! So now, with joy and excitement, we’re sharing the benefits of freshly milled whole grains with families, neighbors and strangers (not for long!) across New Orleans. A Quick History Lesson
Pre-1870s, most flour was stone-ground at local mills. Families bought it fresh, often milled weekly, with the germ and bran intact. It had a short shelf life but was nutrient-dense.
With the industrialization of roller mills, it became too easy to separate the bran and germ from the endosperm, producing a fine white flour that stored much longer but lost oils, vitamins, and minerals in the process. By the 1930s, malnutrition was widespread because refined flour lacked essential nutrients. The U.S. government responded with the enrichment mandate (adding back iron, thiamine, riboflavin, and niacin). But enrichment never replaced the full nutrition of fresh-milled flour.
Today, over 100 years of mass-produced refined flour has trained people to think stripped-down, shelf-stable flour is normal. But we’re changing that!
