Sourdough Kefir Pancakes

Ingredients (makes ~12 pancakes):

  • 1 cup (240 g) sourdough starter (discard or fed)

  • 1 cup (125 g) soft white wheat flour or einkorn flour

  • 1 cup (240 g) plain kefir

  • 1 large egg

  • 2 tosp sugar, honey, or maple syrup

  • 2 tbsp melted butter or oil

  • 1 tsp baking soda

  • 1 tsp baking powder

  • ½ tsp salt

Instructions:

  1. In a bowl, whisk: starter, kefir, egg, sugar, and butter.

  2. Add flour, baking soda, baking powder, and salt. Stir just until combined.

  3. Let rest 5-10 minutes.

  4. Cook pancakes on a medium-hot, greased skillet (about ¼ cup batter each).

  5. Flip when bubbles form and edges look set; cook 1-2 minutes more.

  6. Serve warm with butter, syrup, or fruit.
