Einkorn Banana Bread

Ingredients

• 1 ¾ cups freshly milled einkorn flour

1 tsp baking soda

• ½ tsp salt

½ cup butter, melted (or coconut oil)

• ½ cup raw sugar (or honey/maple syrup)

• 2 eggs

• 3 ripe bananas, mashed (about 1 ¼ cups)

• 1 tsp vanilla extract

• Optional: ½ tsp cinnamon, ½ cup chopped nuts or chocolate chips

Instructions

1. Preheat oven to 350°F (175°C) and grease a 9x5" loaf pan.

2. In one bowl, whisk together the flour, baking soda, salt, and (if using) cinnamon.

3. In another bowl, mix melted butter, sugar, eggs, mashed bananas, and vanilla until smooth.

4. Gently fold in the dry ingredients just until combined - einkorn doesn't like overmixing.

5. Pour into the pan and bake 45-55 minutes, or until a toothpick comes out clean.

6. Cool 10 minutes, then transfer to a rack to finish cooling.

Tips for Einkorn Success

• Batter should be a bit thicker than regular banana bread — that's normal.

• Because einkorn absorbs liquid slower, let the batter rest 5-10 minutes before baking for best texture.

• Keeps moist for days, and the flavor deepens after 24 hours.
